The Evolution of Barbecue

First they smoked pork

And BBQ was born

Then they tried chicken and ribs

This is great we want more!

So Texas took the art form higher

But beef is hard, lesser states didn't risk it.

But slow smoked on an oak fire

Nothing beats smoked brisket!



Okay technically they smoke brisket in Kansas too, but it just doesn't get the focus like here in Texas.
